Stuffed Roasted Pork Loin


Stuffed Roasted Pork Loin

Ingredients:

Pork loin

Shallots, chopped small

Mushrooms

Spinach

Olive oil

Salt

Pepper

Montreal steak seasoning


*Butcher’s twine is needed to truss the pork loin*


Method of Preparation:

 

  1. Preheat the oven to 450 degrees F
  2. Using a small boning knife, butterfly the pork loin by slicing it so it can lie flat
  3. Cover the pork with plastic wrap, pound the pork so it is even
  4. Season the pork with salt and pepper
  5. In a sauté pan, add a small amount of olive oil and sauté the shallots
  6. Then add in the mushrooms and lightly sauté
  7. Add the spinach and toss to wilt, remove the spinach mix from the pan and cool
  8. Once cooled add the spinach mix to the butterflied pork loin
  9. Roll the pork loin, and truss with the butcher’s twine
  10. Rub the pork with Montreal seasoning
  11. Roast the pork in the oven for 5-10 minutes
  12. Then turn the oven temperature down to 350 degrees F and continue roasting pork until it reaches 160 degrees F
  13. Allow the pork to rest for 15 minutes before slicing
