Roasted Beef

Ingredients:

Beef

Garlic

Spanish onion, sliced

Foodservice mushrooms, sliced

Montreal steak seasoning (Purchase or Make your own using: Course salt, black pepper, crushed red pepper, garlic powder, paprika)

Blended oil

Beef stock

Salt

Pepper

 

 

Method of Preparation:

 

  1. Preheat the oven to 450 degrees F
  2. Using a paring knife, make slits in the meat and place the garlic inside of it
  3. Rub the meat with Montreal steak seasoning and blended oil
  4. Roast the meat in the oven for 5-10 minutes to oven sear the meat
  5. Then turn the oven down to 350 degrees F and cook until desired temperature
  6. Allow the meat to rest for 15 minutes
  7. Place the pan drippings into a pot with the beef stock
  8. In a sauté pan, add a small amount of oil and sauté the onions
  9. Add the mushrooms to the pan and quickly sauté
  10. Next add the onion and mushroom mix to the pot of drippings
  11. Allow the jus to simmer and reduce
  12. Thicken the jus with a roux or a cornstarch slurry

 

 

Temperature Guild

120 degrees F – 125 degrees F= Rare

130 degrees F – 140 degrees F= Medium Rare

145 degrees F – 150 degrees F= Medium

155 degrees F – 165 degrees F= Well done

175 degrees F= Very well done
